How do I invert the pitch on my mouse?

Use the in-game options menu:

Press Esc (possibly a few times) to bring up the game menu.

Select 'Controls'.

Select the 'Controls' tab.

Select the 'Invert mouse pitch' entry and press Enter to toggle the setting.

Press Esc and then confirm saving the changes to the profile.

This will invert the vertical mouse axis for classic flight mode (only).

Note: There is no game setting for mouse sensitivity.
